Alpha Omega Wines

Cabernet Sauvignon is the core varietal of Napa Valley. Cabernet likes the heat and sun of Napa Valley so it can reach ripe aromas and tannins which make the varietal very exciting. Although, as with every wine, the balance between tannins, acidity, mouth feel and aromas has to be respected. In light of this, we add a touch of Merlot for softness, Cabernet Franc for spice and Petit Verdot to strengthen the wine

Color: brilliant ruby red with touches of cherry red on the rim

On the Nose: explosion of black currant, cedar wood, saw dust, grenadine and black cherry lingering on dry spices with touches of clay, nutmeg, chocolate and fresh plum

On the palate: soft fruit entrance with black currant, blueberry and black cherry, balanced with a backbone of acidity with hints of red currant, red cherry and blackberry pie

The Proprietary Red is a classic Bordeaux-style blend with a high percentage of Cabernet Sauvignon, but also a greater presence of Merlot, Cabernet Franc and Petit Verdot. This type of blending tends to make a wine that is denser, with more diversity in its profile. Due to the almost equal balance of Merlot and Cabernet Sauvignon and equal balance of Cabernet Franc and Petit Verdot, we consider this a bit more of an “intellectual” wine.

Color: dark ink with touches of ruby and purple on the rim

On the nose: dense expression of dark cherry and blackberry with touches of lavender, cedar, cigar box, leather and ashes balanced with fresh cut violet, touches of kirsch and sauted mushrooms

On the palate: velvety entrance of blue and black berries with hints of plum, geranium leaves and violet candy, lingering on dark cherry and tomato stems

The diversity of clones and our cool climate vineyards make our Chardonnay unique. The natural high acidity allows us to ferment 100% in barrels, and go through 100% Malolactic Fermentation. We strive to accomplish the best of both worlds - high acidity and minerality like a traditional Burgundy yet with roundness on the palate as a traditional California Chardonnay.

Color: light yellow gold with hints of white gold on the rim

On the nose: apricot, pecan, cashew, banana and fresh baked bread, lingering on marzipan, cinnamon, cedar box, quince and honey

On the palate: soft entrance evolving on roundness and supported by acidity, with touches of vanilla bean, pear and pineapple with hints of lemon and grapefruit

The Late Harvest is made out of two varietals, Sauvignon Blanc and Semillon. They are left on the vines for an extended period of time, for a fungus called botrytis, the noble rot, to grow on the skins. Botrytis creates channels through which water can evaporate in order to concentrate the grape with sugar. Our Late Harvest is a typical Sauternes style of wine, but our goal is to make sure to have enough acidity to balance the sweetness.

Color: bright and shiny yellow gold with hints of green and straw

On the nose: explosion of apple cider, apricot, quince paste, canned mango, fresh cut grass, honey, fresh basil and tea leaf

On the palate: tender entrance evolving on a soft mouth feel balanced with fresh acidity and touches of quince, apricot, pineapple lingering on tangerine, white nectarine, liquid flower honey and bitter orange

At Alpha Omega, our goal is to create a balance between Bordeaux-style Sauvignon Blanc, which we barrel fermented to give more of a mouth feel, and a New Zealand-style Sauvignon Blanc, which is crisp, fresh and expressive. Sauvignon Blanc is a varietal with a high acidity, so we never allow it to go through Malolactic Fermentation to ensure we keep the backbone of freshness and the varietal’s fragile aromatics.

Color: bright, shiny gold with hints of mercury

On the nose: good minerality, wet rocks, toches of pear, quince, honey, vanilla, cherry blossom, banana, bubble gum, grass and chamomile

On the palate: soft mineral entrance evolving on bright acidity with touches of pencil shavings and gun powder, lingering on pear, orange, grapefruit and hints of hazelnuts
