"The beauty of the 2015 vintage is not only that it was early and warm, but also that it had a limited number of heat spells that gave us concentration and power. We finished harvest far ahead any threats of rain. The continued effect of the drought led to a very strong malolactic bacteria. We therefore had to be extremely careful with the microbiology of the vintage to ensure that organisms did not turn wine into vinegar. The vintage left us with a round, sexy profile. To compensate, we needed to make sure we extracted plenty of tannin to support it. Due to the limited number of heat spells, the extractability was very good and fast on early sites. It was a little more difficult on later ripening sites, and on these we did a longer extraction time."
